The Rattlesnake Grill Margarita

caster sugar 30 gm
boiling water 30 ml
fresh lime juice 125 ml
fresh lemon juice 125 ml
tequila 325 ml
triple sec 100 ml

Dissolve the sugar in boiling water, let cool. Combine in a 1 litre container the lime, lemon, tequila, triple sec and sugar water. Chill until needed.

To serve:
Set up 2 shallow plates; 1 with a couple of mm of the mix poured in, and 1 with flaked salt (Mortons Sea Salt is best – don’t use commercial table salt). Prepare glasses by dipping the rim first into the mix, then into the salt to coat the rim.
Fill a cocktail shaker 3/4 with ice, pour in mix to nearly full, cover shaker & shake like buggery – ideally till the condensation on the shaker turns frosty. Strain into the salt rimmed glass & enjoy!

Makes about 6 x 150 ml serves, because you’ll want to have a couple each!!

Some people like to serve these over ice, which is okay. To make a frozen margarita, use about half as much ice and blend until slushy.
