Pomerancza and Earl Grey sour cocktail recipe from Zeta Bar

Inspired by molecular gastronomy, The Hilton’s Zeta Bar is fond of using foams on some of their cocktails and our favourite example of this is the Pomerancza and Earl Grey sour. Despite being a sour, this has a sweetness to it that increases as the foam melts into the drink. Here’s the recipe:
- 45ml Belvedere Pomerancza (which is a mandarin and orange blossom flavoured vodka)
- 15ml Earl Grey-infused sugar syrup
- 40ml lemon juice
Shake all ingredients with ice and strain into a glass-footed coffee mug, insert Earl Grey tea bag and top with Earl Grey foam.
The foam is made by infusing ten Earl Grey tea bags in a Boston glass and mixing this with eight egg whites and 60ml of sugar syrup in a 50cl soda siphon, which should be refrigerated overnight before using.
Serve the coffee mug on a saucer with a teaspoon and sugar cubes.
